The Linux desktop scene is in shambles because on one side you have a project run by midwits who LARP as UX experts and reject absolutely any proposal that improves productivity, and on the other side you have buggy trash written by people who can barely complete fizzbuzz in 30 minutes.
Why doesn't the community stop trying to design a desktop environment from scratch and just copy macOS feature-for-feature?

Because the "community" is made up with a ton of different groups all of which have completely different philosphies and ideas of what linux should be, hence the number of desktop environments or the people choosing not to use DEs and using window managers instead. Even then everyone has different preferences on how they want to manage their desktop with that specific DE.
You're basically asking why lego doesn't stop releasing sets and just release 1 that pleases everyone in the world.

As much as I'd love to have this (as long as we were copying macOS from when its devs actually gave a shit about UI/UX), I don't think this is really possible without Apple intervening to shut it down.
It will never happen, linux will slowly die because everyone is so different and unique. The only way for linux to survive is for a big corpo like Valve to make a single Linux OS that everyone uses.
Once that happens, everyone will make programs and shit for that OS and will drop support for all the other distros, you will see more and more bugs and errors, and your only answer will be to install SteamOS.

I'm not much of a techie and even I managed to switch over to linux and have a nice improvement to my quality of life on my pc. Certain games even run better on linux than on windows for me like factorio and BG3
