So what is paganism, outside of the laymans usage of "everything that I don't believe is paganism"?

"everything I don't like is paganism" is truly the proper sense of the word.
It's not used in any meaningful academic sense.

1. Any religions that isn't the abrahamic majority a given country. If your country is majority Islam, then Christians, Budhists, and other folk religions are pagan.
2. Any extinct non-abrahamic pagan. That's why old Hellenic, Nordic, Arabic, etc religions are considered pagan and no one's complaining while Hindu and Shinto are rarely called pagans.
Isn't paganism more used to refer to historic European religions? Specifically Germanic and Italic religions? So wouldn't that mean Hinduism is just Hinduism.
Or are we talking only from a Christian worldview in which everything that is not Christianity is paganism?

Is paganism generally just multitheism? Or is it a specific set of religions?
I mean yeah it essentially is. Its just "Pagan/Paganism" generally applies to the pre-abrahamic faiths of europe and the mediterranean. Assuming you arent coming from the Abrahamic view of "everything but my religion is paganism" of course
