I run a vpn server on a Raspberry Pi to connect to with my phone. That way my phones traffic gets filtered with a pi hole and I can access my NAS

setting up a vpn into your network to access everything from abroad is a good usecase.
You no longer need to worry about your ISP seeing what pages are transferred over your line. Most websites have HTTPS now.
It's the DNS requests that they track.
Use a diffrent DNS

The actual code that manages connections is open source and written in go, it's built around wireguard so connections are encrypted, and cannot be tampered with.

It's more needless hassle and all you're getting is a re-implementation of open source software.
Headscale gives you more freedom, yes, but it's really nothing worth the hassle to make sure open source is open source.
You also have to run your own node, and at this point i'd use a difrent solution.
I'm just fine with using tailscale.
