If you want to convey that a character is not smart...

Make them a dishwasher. You must still lacquer the character in the veneer of a wise man though.

What are some other jobs that say more about a character than the character proper?

Jobs are meaningless roles. If someone washes dishes long enough they will accidentally develop the most efficient way to wash them, this can be interpreted as wisdom.

nah, the dishwasher will still need a plumber to tell them where to annoying shit is stacking up on the demo. sad story, i tried to take pride in such a job at one point.

Very few writers write jobs well (I'm not counting 'writer' as a job).
In the 19th century I reckon only four did: Conrad and Melville know what working as a sailor is like, Trollope understands bureaucracy and politics, Hardy has a feel for rural work.
Zola does a lot of research of external detail but never gives the impression he understands what working in the mines or fields or a department store is actually like for the person doing it. Tolstoy is delusional. Most were wise enough to skirt abound the matter

    Philosopher, apparently.

Playing so heavily into stereotypes is fine for a sitcom but in literature if you rely on stereotypes to define your characters you will end up with flat and lifeless characters.

Tony Montana was a dishwasher briefly in scarface. It's not lit but it does provide an accurate refutation.

I caused an insurrection at a restaurant where I was a dishwasher. We all walked out. Sometimes it's just the beginning of the story.

I dunno but my dishwasher works. Sometimes you have to smack her around a few times and she gets the job done nicely.

Top 3 traits of writing smart characters:

Make the character someone who posts on IQfy.

Also they should leave full spaces between each line.

Also they should have a hyperfixation on "being smart" or "being intellectual".
