I have a lenovo Y520 laptop and the singular 8gb ram stick inside it is a "RMSA3260MH78HAF-2666".
Would it be an issue if I buy a stick of "RMSA3260KC78HAF-2666" or "RMSA3260ME78HAF-2666" as a replacement?

From what I see, the ram you have is a DDR4 at 2666 MHz.
DDR4 is standardized, so you can buy any DDR4 SODIMM ram and it should work it in your laptop. I'd probably recommend you just get 16 Gb at 3200 MHz and you'll be fine.

Good practices, but on laptops the replaceable parts are more standardized than its desktop parts, otherwise it would a huge pain in the ass.

Sadly, you got a model that doesn't support the average ram speed (2666 MHz), get whatever sodimm ddr4 2400MHz ram you can find, you will be fine, don't worry too much about it.

I will buy as close of a model to the one ram stick I already have.
Another question, when buying the stick how should I see if it's nondamaged? Same question for my own stick but I would like to figure it out without opening up my laptop.

Production costs, it is better to keep most components the same, people don't buy laptop components as often, and nowadays, more components are being soldered, so the market for it is shrinking.

Check there are no cracks on the board and pins should have a uniform color, dirty pins usually mean they have been collecting dust on the floor or thrown together with other ram without proper care, or the ram stick has been changed a lot. Pic related looks good.

just find a any DDR4 SODIMM with the same speed and capacity if and there's a 99.9% chance it works and if it does not the blame is on a picky motherboard or memory controller but on a normal laptop with a slot it shouldn't be like that

I have been advised to pick the exact same ram model my laptop already has which where I live is not possible.
Seriously, most of us don't look for exact models (though it could be argued that this simplifies things for "non-techies"), but you asked on a computer nerd board, so our answers will be along the lines of "find another DDR4 SODIMM with same speed and capacity".
It is extremely unlikely that it will not work, extremely. Some autists may even avoid cheap RAM by "unheard of" names like yours and go for Samsung, PNY, and other popular brands instead to make sure they are getting quality parts.

Because the laptop only has two slots out of which one is already occupied.
so just get another stick of ddr4 that's at least the same speed (ram will always run at min speed of stick) and then you've got 16gb not 8gb!
