We use Alpine everywhere
firewalls, NAS, SAN, mail, webhosting, RADIUS, KVM, PBX.. you name it
Happy I don't have to deal with SystemDick
RHEL or Oracle Linux (which is just RHEL rebuild)

I use Oracle. But I run databases on all my servers, and Oracle provides a ton of scripts to make setup and management super easy.

Start with a Debian base, then whack docker on top, then go wild in the isles.
Debian or Fedora Server.
Depends on your needs. Alpine would be my first choice because of how tiny it is. However, if I need more, I would pick Debian.
today i use debian for most of my servers.
one of my older meme ones uses arch, and I used to use centos but centos died so... yeah debian is easy, well documented, userbase isn't as moronic as ubuntu- just use debian
