Bluetooth has a lower polling frequency. With the wireless dongle they can go over 1000Hz no problem, but on Bluetooth they're stuck below it.

Bluetooth is a slow protocol. Even when you make it not compress and decompress the data, it still has a noticeable latency. Also the polling rate is low.
If you want something good and wireless then you ditch bluetooth, it's as shrimple as that. We'll see this in audio too eventually, there are already some examples.
