wouldn't it get caught in the armor, get pulled out, be painful, etc? I never understood how that worked outside of a topknot

Roman and Islamic cities generally had much better access to clean drinking water and better wastewater management, so your chance of dying of dysentery would have been considerably less. Medieval Europeans resorted to diluting all their water with alcohol it was so filthy - imagine every peasant in 8th Century England being afflicted with FASD. Medieval peasants worked less, were less subject to exploitative plantation working conditions than Roman commoners and slaves, but they would have also had reduced literacy, a shorter lifespan, and less freedom to travel.

Going from living in an apartment building and working a service job or a farmer in a farming town with much higher safety and access to gyms, doctors and bathhouses to living in a straw hut almost certainly as a serf owned by a descendant of a barbarian warlord working his fields.

And? They had incredible memory to make up for it. Not to mention not all were illiterate. My ancestors at that time could write and they were Swedish peasants.

Illiterates can be canny survivors with the hand smarts to survive but it also means that they are easily tricked, deceived, or outwitted, and if somebody is oppressing them they are too isolated to have a voice

this is basically the ordinary life of a commoner, if they are a craftsman like a blacksmith then just replace farm work with smithing. if you live in an area with feudalism then you sometimes work on your liege's land instead of your own a few days a month. sometimes there might be extra festivities some days but those most likely take place on red days which just means you should follow the sunday schedule and add in the celebrations.
