Europeans turn up somewhere like India or the Congo and start keeping records, taking photographs, recording details that a local chronicler, if they even existed, would never have found worthy of note. Suddenly, the historical record goes from either being empty, or focusing exclusively on kings and sultans, to providing detailed accounts and depictions of famine, poverty and violence. Now every third-worldist can paint the colonial era as a hellish nightmare while pretending that everything that came before was like a pristine medieval romance.

Pre-colonial history also documented that too? A lot of famines were known of or recorded.
What records did the Congolese produce? How well did Indians document their own famines? Which pre-colonial society had its own photography?

Well there are Indians who documented prior famines in India. Sahelians knew that mega droughts came in frequently and write about it, Ethiopia has a frickton of Saint Hagiographies and court documents. The Swahili wrote of their history and trade. Coastal Yoruba used and knew if Latin and Arabic script
