I read a bit about Funtoo a while ago to see what it does differently than Gentoo, and I couldn't see its purpose--unless you're loyal to its creator. The idea behind Funtoo is that it's a bit easier to get started over Gentoo since you choose the ISO with the flags set for your CPU's microarchitecture and the desktop environment setup (GNOME) is prepared for you (profile and USE flags are set). Basically, it's Gentoo without some of the work.
So it's an easier to setup, rock solid distro? Why wouldn't it be recommended?

It's like the worst parts of Gentoo (compile times) without its best parts (customization). I mean you could get into that stuff on Funtoo, but the wiki advises you not to touch portage, make.conf, etc. Those who are experienced and use Gentoo choose to because it gives them the tools to tinker with their system. Overall, it's pointless. I already think Gentoo is a waste of time, so I wouldn't recommend any distro based off of it unless you use your PC as a toy or want to look 1337 or some shit.
I would say the only distros you should choose from are: Linux Mint, Debian, Arch/EndeavourOS, and Fedora.
Linux Mint is quite comfy, especially for users transitioning from Windows.
Debian is great too but isn't as beginner-friendly as Mint.
Arch is excellent if having the most up to date software is important for you. It's surprisingly stable for being bleeding edge but it's more likely that you will be forced to dive into the nitty gritty of Linux at some point.
Fedora is a nice combination of the above mentioned.

it is actually. Ubuntu is based on Debian Testing which means more up-to-date packages. it also has OOTB third-party drivers, custom kernel patches made by Canonical and large vendors support. it also has a good implementation of Gnome imo, but if you don't like it you can always change your DE, no big deal.

2) have documentation as good as archwiki

They're all pretty much identical. The only difference is the software that comes preinstalled and the repos. I'd say avoid debian unless you know what you're doing bc their repos are so outdated. Also, rolling release is nice because you install once and never have to hop again. Arch, OpenSUSE Thumbleweed, Gentoo (if you're into that kind of thing), probably some others.
Mint if you want something that just werks and gets out of the way

Xubuntu if your and old ass computer
Debian if you want stability on your server
